Farfalle

Short pasta shape which originates from a sheet of pasta cut into narrow squares in the center. On the palate they reveal a pleasant variety of textures between the thicker and fuller central part in relation to the thinner ends of the wings. With their cheerful and imaginative shape they fly from one recipe to another, and lend themselves well to both hot dishes and pasta salads along with everything the imagination suggests: cherry tomatoes or other vegetables, basil, mint, capers, tuna, fresh cheeses and so on and so forth.

Perfect with: Vegetables and cheese. Delicious also with fish sauces

Cook it like this: Mixed in a pan with the sauce or in cold pasta salads
