Whole Wheat Penne Mezzani Rigate Neapolitan style

Ingredienti per 4 persone
  • 350 g Whole Wheat Penne Mezzani Rigate
  • 350 g PDO bufala ricotta cheese
  • 2 Coppery tomatoes
  • 12 Pitted green olives
  • to taste Basil
  • to taste EVO oil
  • to taste Salt

 

Chop the olives. Mix them in a bowl with the ricotta, together with two tablespoons of oil. Chop the basil. Boil the penne in abundant salted water. Meanwhile, peel the tomatoes and cut them into cubes. Drain the cooked Whole Wheat Penne Mezzani Rigate, leaving it al dente. Season it with two tablespoons of oil, the chopped basil, the ricotta into balls and diced tomato. Mix and serve.
